You can try below solutions based on the origin of your logs:
1. If log is generated in ADF pipeline run itself:
1. ADF have oob connectivity to log analytics and logs almost everything in a pipeline run into Azurediagnostics table of your liked log analytics workspace.
2. If log is generated while sp execution
2. You can store that log into a table in your db. A scheduled job(logic app) can pull the logs from that table and send to log analytics workspace using oob connector available in logic app.
3. Anything which is not getting logged from ADF to log analytics out of the box, Like any custom message
3. Whenever you want to log something like that, for eg: If an activity fails (say your sp execution), you want to log a custom message, then call a generic sp which push the log messages into table suggested in step 2 and follow scheduled logic app approach from step 2.
